Eating well doesn’t have to mean spending hours in the kitchen or settling for meals that leave you hungry an hour later. You can keep things simple and still end up with a plate that’s flavorful, filling and good for you. Here are six healthy recipes that do just that.
1. Briny Garlic Spaghetti Puttanesca
Some of the best weeknight dinners come from the back of your pantry. Spaghetti puttanesca is a great example, as it brings together ingredients like olives, capers, anchovies, tomatoes and garlic for a sauce that tastes far more elaborate than it actually is.
Let garlic, finely chopped anchovies and red pepper flakes gently sizzle in olive oil until the garlic is lightly golden. Capers and olives follow, adding salty, briny bites throughout the sauce. Stir in roughly crushed tomatoes and, if you want more protein, some canned tuna.
Try to cook your spaghetti until it is almost al dente, then move it straight into the skillet. A few splashes of starchy cooking water loosen the sauce and help it cling to every strand as the pasta finishes cooking. Finally, add a drizzle of olive oil, fresh parsley, grated Pecorino or Parmesan and plenty of black pepper. Thanks to the anchovies, this recipe provides a dose of omega-3 fatty acids for your brain and heart health.
2. Crispy-Crumb Baked Haddock
There’s something wonderfully simple about a tray of baked fish. Haddock has a mild flavor that pairs beautifully with buttery, crispy crumbs, so you can turn a few basic ingredients into a comforting dinner. For this healthy recipe, you need to preheat your oven to 350° Fahrenheit and melt the butter in a small bowl. Mix the melted butter with crushed crackers, then season the mixture with black pepper or lemon pepper.
After that, lightly coat a shallow baking dish with cooking spray and scatter a small amount of the crumbs across the bottom. Arrange four haddock fillets in the dish and cover them with the remaining buttery crumbs. Add a squeeze of lemon juice and a little parsley if you like. Bake for about 20 minutes, but keep an eye on the fish, as thicker and thinner fillets cook at different speeds. When the flesh turns opaque and flakes easily, dinner is ready.
3. Golden Quesadilla With Broccoli and Cheddar
Got a tortilla, some broccoli and a little cheddar? You’re already halfway to a quick, satisfying meal. This quesadilla recipe is heaven-sent when you’re craving something comforting but still want to sneak a vegetable onto your plate.
First, prepare the broccoli. If you’re using frozen florets, let them thaw in the microwave and give them a good squeeze to remove excess water. Chop them into small pieces and spread them over half of a 10-inch whole-wheat tortilla. Sprinkle the cheddar over the top, fold the tortilla in half, and pop it into a skillet over medium-low heat.
Give each side about three minutes, or until the tortilla turns golden and the cheese melts. You can enjoy a crisp outside, gooey cheese and tender broccoli in every bite. With nine grams of fiber and 21 grams of protein, this simple quesadilla has enough staying power to work for lunch or a quick dinner.
4. Warm Spiced Chickpeas and Sweet Potato Bowl
The next healthy recipe draws inspiration from the eating habits found in the Blue Zones, regions known for unusually high numbers of people who live to older ages. This bowl follows that idea with chickpeas, sweet potatoes, kale and brown rice, so you get plenty of fiber and plant-based protein in one satisfying meal.
You have two options for the sweet potatoes. Give sliced pieces about 25 to 30 minutes in a 400° Fahrenheit oven for caramelized edges, or take the shortcut and microwave whole potatoes until tender before mashing them. Either works, so choose based on how much time you have.
The chickpeas get their flavor from garlic, fresh ginger, cumin, cinnamon and turmeric. Once they have softened in the skillet, add the baby kale and let the leaves wilt under a lid. Spoon the brown rice into your bowl, pile on the warmly spiced chickpeas and kale, then add the sweet potato. A little salt and pepper finish the dish.
5. One-Pot Garlic Shrimp
If you’ve been using your rice cooker solely to make plain rice, it’s time to level up your game with this garlic shrimp recipe. Start by tossing peeled shrimp with olive oil, sherry, paprika, minced garlic, salt and pepper. It’s best to use jumbo shrimp for this recipe because they stay juicy through the cooking process.
Set them aside while you layer chopped chorizo, red bell pepper, onion, long-grain rice and a little crushed red pepper in your rice cooker. Add water, then arrange the shrimp over the top so the garlicky oil runs into the rice as it cooks. Once the rice cooker finishes, move the shrimp to a plate and stir chopped parsley and fresh lemon juice through the rice. Spoon the rice into bowls, top each serving with shrimp and finish with extra parsley and lemon.
6. Cheesy French Bread Pizza With Barbecue Chicken
Pizza night gets a quick makeover with French bread as the crust. You get the crispy edges and gooey cheese you want from a pizza, plus tender shredded chicken and tangy barbecue sauce for a little extra flavor. A loaf of French bread makes a wonderfully sturdy base. Slice it lengthwise, toast the cut sides for a few minutes, and you’re ready to build.
Toss cooked, shredded chicken with some barbecue sauce while you mix mozzarella with cheddar or Gouda. Then, spread more sauce across the toasted bread and layer on the cheese, thinly sliced red onion, saucy chicken and another blanket of cheese. The oven takes care of the rest. About 12 to 15 minutes at 425° Fahrenheit should leave you with bubbling cheese and golden spots around the edges. A sprinkle of chopped cilantro and another drizzle of barbecue sauce give each slice a fresh, tangy finish.
